GARGANELLI DEL PASSATORE

Questo sugo, chiamato anche "alla boscaiola", e i garganelli sono una combinazione perfetta.
Se doveste mai capitare alla Festa dell'Unità di Villanova, non potete non ordinare questo primo: i garganelli vengono fatti a mano dalle vecchie signore del paese e così il sugo. E' una vera delizia!

INGREDIENTS
50 gr di smoked bacon

1 red pepper
1/2 onion
4-5 champignons
1 bunch of aromatic herbs (rosemary, bay and sage)
250 gr tomato sauce or peeled tomatoes
salt and pepper
oil
parmigiano reggiano

Stir fry in oil the chopped onion and bacon, then add the aromatic herds, the pepper cut into cubes or strips and the mushrooms cut into small pieces.
Stir fry for a few minutes (you can blend it all with a glass of dry white wine) and add the tomatoes peeled and squeezed between the hands.
Add salt and pepper and cook for a good half hour.

After that, cook garganelli in salted water, drain them and pass into the pan with the sauce and a generous sprinkling of parmesan cheese.
