Strichetti with green pea sauce is a grand classic. The sauce can be made as described below, or, if you have already prepared a good meat sauce, you can add a good dose of peas during the last half hour of simmering. It's delicious!
INGREDIENTS
300 g of fresh bacon
300 g of peas
3 spring onions
700 g of tomato sauce

salt and pepper

Stir fry the finely chopped bacon and onions in lard or olive oil.
Once it is all well browned, add peas and tomato sauce.
Season with salt and pepper and cook over low heat for at least half an hour.
