strozzapreti pancetta prosciutto salsiccia

Questo è un ragù ricco e saporitissimo, che compensa ampiamente la semplicità degli strozzapreti.
INGREDIENTS
200 gr fresh bacon
200 gr prosciutto
200 fresh sausage
1 medium onion or 2 shallot

150 gr tomato sauce or chooped tomatoes
1 glass of dry white wine

parsley
salt and pepper
oil
1 chilli (or more, as you like)

Stir fry the chopped onion and the chilli withb oil and when the onion is golden add the finely chopped bacon.
After 3-4 minutes add the sausage witout the skin and properly shredded salsiccia.
When the sausage is stri fried, add prosciutto cut into thin stripes and fade everything with a glass of white wine.
Finally pour the chopped tomatoes and cook it on a low heat for half an hour, seasoning with salt and pepper if necessary.
When the sauce is almoust finished, sprinkl with chopped fresh parsley.

Affinché il condimento si impregni, gli strozzapreti vanno conditi e saltati in padella con abbondante formaggio secco grattugiato. 

Un altro condimento perfetto per gli strozzapreti è quello Salsiccia e asparagi alla voce Strichetti.
