L'accogliente Mumbai - welcoming mumbai

“Dopo 10 minuti a casa di mia madre, sei già con le gambe allungate e i piedi sul tavolino! Sfido chiunque, è il posto più accogliente che io conosca” dice Amrita.

"After 10 minutes at my mom's, you'll be with your legs stretched out and your feet on the coffee table! I swear, it is the coziest place I know of, "said Amrita. 
Viveek ci ha presentato Usha, quasi una seconda madre per lui. Come tante altre persone squisite, Usha fa parte della famiglia allargata di Viveek, fatta di amici, persone con cui è cresciuto e che ha visto crescere, suoi studenti, altri artisti o semplicemente incontri di vita casuali.
“Dopo 10 minuti a casa di mia madre, sei già con le gambe allungate e i piedi sul tavolino! Sfido chiunque, è il posto più accogliente che io conosca” dice Amrita, la sua figlia minore.

Effettivamente è proprio così. Arrivate, ci sentiamo subito a nostro agio.
Usha è un vulcano di energia e di parole ed è simpaticissima. È stata insegnate di inglese e storia ad Abu Dhabi, ottima cuoca, ora è in pensione e si occupa della famiglia. Ha due telefoni a disposizione con cui chiama amici e parenti per risolvere problemi, dare consigli o semplicemente chiacchierare. È una donna curiosa ed interessante, ascolta sorridente il nostro progetto poi dice: “venite qui quando volete, la porta è sempre aperta”. Ci invita a colazione e ci serve il suo famoso caffè. 
Viveek introduced us to Usha, referring to her as his second mom. Just as so many other lovely people we've met here, Usha too is part of Viveek's extended family, made up of friends, people he grew up with and has seen grow, his students, fellow artists or just random life encounters.
"After 10 minutes at my mom's, you'll be with your legs stretched out and your feet on the coffee table! I swear, it is the coziest place I know of, "said Amrita, her youngest daughter. 

And she was right! Minutes after our arrival, we immediately felt at ease.
Usha is a volcano of energy and words, a very pleasant lady. She used to be a teacher of English and history in Abu Dhabi, she has always been an excellent cook, and is now retired and devoted to her family. She has two phone lines, always open to calls from friends and relatives who turn to her for problem solving, advice or just for a chat. Such an intriguing and interesting lady she is, and when she heard about our project, her eyes lit up with excitement. "Come by any time you want, my door is always open!" Then she invited us to stay for breakfast and served us her famous coffee.

Sta preparando delle deliziose dosa, sottili e croccanti (qua le chiamano le crepes indiane), accompagnate da aloo sabzi e chutney di cocco. Basta un assaggio e subito vorrei sapere tutto di questa sorta di purè di patate arricchito con spezie fragranti. Le spezie sono perfettamente dosate, tutti i sapori e le note diverse sono chiare e distinte sul palato. 
That day, she was preparing some delicious dosas, the thin and crispy ones (here they call them Indian crepes), accompanied by aloo sabzi and coconut chutney. All it took was a little taste, and I wanted to know all about this sabzi thing, a sort of mashed potatoes with lots of fragrant spices. Even if numerous, the spices were perfectly proportioned, all the flavors and various notes were very clear and distinct on the palate. It wasn't just a breakfast, to me it was art!

Colpita dal nostro entusiasmo, ci spiega che in realtà questa è una ricetta semplicissima ma con una infinità di usi. Si può mangiare come oggi con le dosa (che così farcite diventano "masala dosa"), si può usare come contorno o spuntino, si può utilizzare all’interno di un sandwich. “Beh, sarebbe ottimo se ci potessi insegnare la ricetta”. Detto fatto! Ci mette in agenda per il giorno dopo, stessa ora.
Amused by our enthusiasm, Usha explained that it was a very ordinary dish, a simple recipe, with infinite ways to use it. You can eat it as we did that day with dosas (which then become stuffed, thus called "masala dosa"), it can be used as a side dish or a snack, or you can even put it in a sandwich. "Well, it would be great if you could teach us the recipe." No sooner said than done! She added us to her agenda for the very next day.

Usha è originaria di un piccolo paese al confine del Tamil Nadu. “È una ricetta della mia nonna" ci racconta "Era bravissima in cucina. Il suo dono ha saltato una generazione ed è arrivato a me. Mia madre era un disastro. A 10 anni mi ha messo un cucchiaio in mano e da allora non ho più smesso di cucinare”.

La passione non l’assaggi solo nei suoi piatti, ma l'avverti anche in tutti i piccoli racconti ed aneddoti con cui farcisce le sue ricette. È proprio una signora che ti cattura subito e ti sembra di conoscere da sempre, staresti ad ascoltarla per ore e così senti la tua voce che dice: “Ok, vada per un altro caffè!”.  
Usha originally comes from a small village on the border of Tamil Nadu. Aloo sabzi was her grandmother's recipe she told us. "My grandma was a great cook, her talent seemed to have skipped a generation though, as my mother was a disaster in the kitchen! By the time I was 10, I happily took over cooking for the family, and since then I've never stopped!"

Her passion for cooking is so strong, not only can you taste it in her dishes, you can also feel it in the way she passes on her recipes, decorating them with funny anecdotes. Usha is one of those people who fascinate you at once and you feel as if you've known them your whole life. That morning, I found my self in her living room, breakfast long over and done with, chatting away for hours with this amazing lady whom I've just met, already looking forward to our next encounter…
