Never Throw the Tomato Peel Away!

Lo so benissimo, non siamo venute fin qui per frequentare corsi di cucina, ma alla tentazione della super offerta della domenica, non siamo proprio riuscite a resistere: corso di cucina 1$!!

I know, I know, we didn’t come all the way here to attend cooking classes, but we were just so helplessly tempted by the super Sunday offer we stumbled upon: Sunday Afternoon Cooking Class only 1$!

Siamo ad Hanoi da qualche giorno, abbiamo iniziato curiose a guardarci attorno e siamo già state soggiogate dalla magia del cibo di strada, così vario e squisito. Ogni venditore è specializzato in una o massimo due pietanze, affinate negli anni, e per questo perfette al palato.
Stiamo cercando un modo per contattare gente locale, e tra le varie ricerche Sanja scopre questa agenzia che organizza, come tanti altri in questa città, corsi di cucina. Ma c'è un piccolo dettaglio che distingue la Vietnam Awesome Travels dalle altre: solo la domenica corso di cucina a 1 dollaro all inclusive!! Beh oggi è domenica... Come farsela scappare?! Anche nel caso si trattasse di una completa bufala, il nostro risicato budget non ne sarebbe traumatizzato. Così un taxi ci porta alla guesthouse ristorante dove si tiene il corso, fuori dal centro ma proprio affacciato sulle riva del fiume rosso e con un'ottima vista. Sembra proprio sia tutto vero!!

We’ve only been in Hanoi for a couple of days now and already we are enchanted by the magic of the wide-ranging delicious street food here. Each vendor being specialized in one or at most, two dishes refined over the years, guarantees perfect on the palate. 
We were looking for the right way to get in touch with the locals here, and amongst various research, Sanja discovered this tourist agency that, as so many others, organizes cooking classes. What makes Vietnam Awesome Travels stand out is their Sunday afternoon offer: cooking class at an amazingly low cost of only 1$, all included… How could we miss out on that bargain! Even if it’d turned out to be a total scam, our tight budget wouldn’t get traumatized.  So, Sunday come, a taxi took us to the guesthouse restaurant where the course was held, a nice location, just outside the city center and overlooking the banks of the Red River with quite a view.

Qui ci accoglie Ha, quella che sarà, per il resto della giornata, la nostra guida, insegnante di rudimenti di vietnamita e cuoca!! Ha è una ragazza simpaticissima e si diverte come una pazza ad ascoltare 4 europee che ripetono a pappagallo numeri, ortaggi, richieste di sconto...tutto ciò che ci servirà per la spesa al mercato del quartiere. Dopo una mezzoretta di vietnamita intenso, passiamo alla definizione del menù di oggi. “Cosa vi piacerebbe cucinare?" ci chiede. Realizzo solo in quel momento che non c'è un programma preciso. La scelta è nelle nostre mani e menti! Ognuno ovviamente si sbizzarrisce, facendo una sua richiesta. Io mi impunto sulla insalata di fiore di banano e col supporto decisivo di Sanja, la spuntiamo. Gli altri piatti saranno: involtini fritti tipici di Hanoi, tofu al sugo di pomodoro (bisogna sempre avere una scelta vegetariana!), morning glory saltato in padella  e zuppa di noodles.

There, we were welcomed by Ha, who would be our guide, our cook and our basic Vietnamese teacher for the day! Ha is a very pleasant young woman, and she just had a blast listening to 4 Europeans parroting numbers in Vietnamese, vegetables, requests for discount and anything else that would get us through our grocery shopping at the neighborhood market. After about a half hour of intensive Vietnamese for beginners, we moved on to defining a menu for that evening. “What would you like to cook?” Ha asked us, and only then I realized that there was no exact program for the afternoon. The choice was all ours and naturally, each of us indulged oneself listing wishes and requests. I stamped my feet on a banana blossom salad and, with Sanja's decisive support, we got it. Other dishes were: Hanoi style fried spring rolls, tofu with tomato sauce (finally a vegetarian dish in site!), morning glory stir-fry and noodle soup.

Fatta la spesa al mercato, ci portiamo ai fornelli. Sanja, nonostante l'esorbitante costo del corso, decide di non sporcarsi le mani e di rimanere dietro la macchina fotografica. Noi invece, indossato il grembiule, ci sistemiamo ognuna alla propria postazione ed iniziamo a preparare gli ingredienti per l'insalata e gli involtini. Io, nel solito spirito da prima della classe, mi offro volontaria per il taglio del fiore di banana. Il fiore è enorme, simile per forma ad una pannocchia di mais con tanto di foglie ma dal colore violaceo, e va tagliato super sottile: è il compito più noioso della giornata! 20 minuti e metà fiore dopo, mi cimento nella creazione di una rosa dalla buccia del pomodoro (mai più butterò una buccia di pomodoro!). La rosa di Ha è perfetta, la mia un po' più striminzita, ma come primo tentativo non è malaccio. 

Done shopping at the market, we get to work in the kitchen. Sanja, despite the exorbitant cost of the course, decided not to get her hands dirty and stayed behind the camera. The rest of us put on pur aprons and took place at each our working space and started preparing ingredients for the salad and the rolls. In my usual spirit of the “pick me” student, I volunteered to slice the banana flower. The flower is huge, similar in shape to a corn cob, just with lots of leaves and violet in color. It was to be sliced finely I soon found out. The most tedious task of the day! Twenty minutes and half a flower later, I was attempting to create a rose from tomato peel (i will never waste another tomato peel again) . Ha's rose turned out flawless, mine somewhat more skimpy, but as a first attempt not all together bad!

La cosa divertente è che il tutto risulta molto all'arrembaggio. A parte il grembiule e la postazione con taglierino e coltello, il resto non è per nulla organizzato. Quello che ne esce è più simile ad un pomeriggio in cucina tra amici e la cosa non mi dispiace affatto. Mi sento di aver meno tradito lo spirito del mattarello :)

Poi in serata ci sediamo a tavola a gustare le nostre creazioni. Beh quasi nostre: possiamo dire di aver contribuito a 2 dei 5 piatti in tavola. Il menu era troppo vasto e ambizioso!
Però l'insalata di fiore di banano è la chicca della serata (avrà contribuito anche il mio affettare!). Ora devo solo spremermi le meningi per capire un valido sostituto all'ingrediente principale, il fiore di banano appunto! 

The funny thing is that everything seemed rather spontaneous. A part from the aprons and working stations with each its own cutting board and professional knife, all the rest was rather unplanned. What came out if was more like an afternoon in the kitchen with friends, something I did not really mind at all. I feel less of a traitor to the mattarelloaway spirit ;)
Then in the evening we gathered around the table to enjoy our creations. Well almost ours: we can say we contributed to 2 of the 5 dishes on the table. The menu was too broad and ambitious! But the banana blossom salad was the highlight of the evening (my slicing must have helped too!). All I have to do now is rack my brains to figure out a suitable replacement for the main ingredient, the banana flower that is!
