varmt røget laks: un pranzo da asporto

       HOT-SMOKED SALMON: 

                Danish Style Take-away Lunch


Line e Goran, che ci ospitano qui ad Odense, la bella città natale di Hans Christian Andersen (non potete neanche immaginare come si pronuncia veramente Andersen in danese!!), hanno preso molto seriamente il compito di farci assaggiare il cibo tradizionale. 

E cosa può esserci di più danese di un buon laks, ovvero il salmone? Abituatevi a questa parola perchè viaggiando in Danimerca la troverete su ogni menù e vale la pena assaggiarlo in tutte le sue variazioni!!
Line and Goran, our hosts here in Odense, beautiful hometown of Hans Christian Andersen (you can't even imagine how his name is really pronounced in Danish!), took their task of introducing me to traditional foods very seriously. 
Is there anything more Danish than some laks, a.k.a. salmon? Better get used to this word, because travelling in Denmark, you will find salmon on every menu in the country, and I must say it’s well worth trying it in all its many variations!!!

Così oggi le nostre guide ci hanno accompagnato in una pescheria fidata, dove poter comprare e gustare comodamente a casa alcune delicatessen a base di pesce tipicamente scandinave. In pescheria, infatti, potete acquistare direttamente, oltre al pesce fresco, tranci di pesce già cotto affumicato, filetti marinati in vari modi o preparati  con erbe aromatiche.
So today, our guides have accompanied us to a trusted fish shop where you can buy, and comfortably enjoy at home, some typical Scandinavian seafood delicacies. Apart from the fresh fish, Danish fisheries also offer already prepared seafood delicacies, be it cooked and smoked fish steaks or fillets marinated in various ways or prepared with aromatic herbs.
Il menù si è composto di: fiskefrikadeller - polpette di salmone, varmt røget laks - tranci di salmone affumicato con granella di nocciole tostate, røget makral - sgombro affumicato, il tutto servito su pane nero alle noci e un'ottima remoulade ad alleggerire il sapore del pesce. Il pranzo è stato semplice ma davvero favoloso!! 
A questo punto non posso fare un piccolo inciso sulla salsa più tipica della Danimarca, la remoulade appunto. Qui viene usata un pò ovunque: sugli open face sandwiches, sugli hot-dog (street food veramente meritevole di più di un assaggio), sul pesce. La remoulade è una salsa dolce a base di maionese, senape e cetriolini. Le ricette sono molteplici, quindi vi consiglio di portarvi a casa qualche tubetto dentro la valigia.
Tornando invece al pranzo veramente ottimo di oggi, a parte lo sgombro affumicato che va riscaladato 5 minuti in forno ed è una vera bontà, tutte le altre prelibatezze vengono mangiate tradizionalmente fredde. 
Quindi adesso eccovi il mio suggerimento. Quando farete un salto in Danimarca e con una bella giornata di sole, fermatevi in un forno qualnque, acquistate qualche tipo di pane integrale o di segale o quello che più vi aggrada tra le decine di qualità che trovate al bancone, un salto in pescheria per il pesce già pronto e la remoulade, e sistematevi in uno dei bellissimi parchi che potete trovate quassù in ogni città. Il picnic sarà fantastico e voi vi sentirete un pò danesi!
The menu is composed of: fiskefrikadeller - salmon patties, varmt røget laks - slices of smoked salmon with chopped toasted hazelnuts, røget makral - smoked mackerel, all served on dark bread with walnuts and excellent remoulade dressing to lighten the flavor of the fish. Lunch was simple but really fabulous!  
At this point I have to comment on the most typical dressing of Denmark, remoulade. Here, it is used almost everywhere: on the open face sandwiches, hot dogs (street food really worth tasting), fish, etc.. Remoulade is a sort of sweet tartar sauce made with mayonnaise, mustard and gherkins. The recipes vary a lot, so I warmly recommend slipping in a few tubes in the suitcase to bring back home.

Coming back to today’s truly wonderful lunch, apart from the smoked mackerel which is heated in the oven for 5 minutes and is a real treat, all the other delicacies are traditionally served cold. 
So now here is my suggestion. Next time you stop by Denmark and you catch a beautiful sunny day, go to any bakery, get any kind of whole wheat or rye bread, or choose your favorite among the dozens of quality that you will find at the counter. Stop by a fish shop for a ready-made seafood treat and some remoulade and find a spot in one of the many beautiful parks that you can find in every city up here. The picnic will be great and you will feel a little Danish!
